Edible coating for the preservation of pieces of fruit, its manufacturing process and application, where the coating is applied to the fruit by means of a first aqueous solution of an alginate of a high viscosity higher than 250 mpa.s and having a low concentration of between 0.05% to 1% by weight with respect to the total weight of the first aqueous solution, and by a second aqueous solution incorporating a calcium ascorbate crosslinking agent, or calcium lactate, to cause gelation of the alginate, and that it incorporates citric acid as an antioxidant agent, or a combination of citric acid and sodium ascorbate, the second aqueous solution being able to contain malic acid as an antimicrobial agent, where the citric acid and, if appropriate, the malic acid behave as ion chelators.
